Italian Tomato Sauce

This simple sauce is delicious with Arancini and Gnocchi... Slightly inauthentic possibly, but very good with Bean Fritters too. Also a toasted slice of homemade White Bread and a poached Free Range Egg.

Ingredients

  • 1 Onion
  • Tomato Puree
  • Olive Oil
  • Tin Tomatoes
  • Salt & Pepper

Dice an onion into not too small pieces (you want it to have some texture and chunkiness…)

Gently fry in Extra Virgin Olive Oil for 10 minutes or so.  Don’t let the Onions brown; cook them until soft… adding a little Salt

When they smell and look delicious and sweet – add a good squeeze of Tomato Puree and stir for a few moments over the heat before adding a Tin of Tomatoes. Stir, and add a Tin full of water too.  Cook gently, simmering, until the sauce has reduced by maybe two thirds… You’re after a sauce that has some liquid quality, but is also tasty and well reduced – this should take 20 minutes or so with the lid off

Serve hot or warm with Italian dishes… is delicious with some Focaccia and a Green Salad
