‘Fried’ Potatoes

These healthy little 'fried' potatoes (actually oven baked) are the perfect thing to go with BBQ dishes - or on the side with some frittata maybe?! The (optional) roasted garlic with them is delicious, especially with grilled white fish...

Ingredients

  • Potatoes
  • Garlic (optional)
  • Olive Oil
  • Salt

Pre heat oven to 190˚c

Scrub the Potatoes

Chop them into 1.5cm chunks – as square as you can

Line a baking dish or tray with some greaseproof paper and put the Potato chunks in a single layer over the sheet

Brush them with a very tiny amount of Olive Oil (brushing means you use lots less oil than ‘drizzling’… is much healthier)

Sprinkle with a little Salt

Put in the oven and roast for 10 minutes

After 10 mins, add the Garlic cloves (if you’re using Garlic…) and brush the cloves with a very tiny amount of Olive Oil

Cook for another 15 to 25 minutes or until golden brown on the outside and cooked on the inside. If the Garlic looks like it might burn earlier than this, take it out!

Serve any way you like – with some grilled or oven baked white fish would be delicious… Burgers or grilled meat would also be good
