Hazelnut Meringue

These are too good - and make a great accompaniment to an espresso on their own. Equally with fruit and some 0% Greek Yoghurt, these are a blast for pudding - and the nuttiness of them is even good for increasing your 'good cholesterol'! Just don't eat them with cream....

Ingredients

  • 2 Large Egg Whites
  • 1/2 tsp Lemon Juice
  • 50g Golden Caster Sugar
  • 50g Icing Sugar
  • 25g Hazelnuts

Pre-heat the oven to 130˚c

Whizz up your Hazelnuts in a food processor – don’t turn them into powder – just some little bits of Hazelnut

Whisk Egg Whites and Lemon Juice with an electric whisk until they are at soft peak stage

Add Caster Sugar and whisk until stiff

Add the Icing Sugar and ground Hazelnuts, and fold carefully until combined

Spoon out onto a baking tray lined with greaseproof paper… You can go small or large – and if you want to be super professional you can ‘pipe’ them (no idea about this though, I’m afraid!)

Bake for 20 – 30 minutes or so – they should be crisp outside but soft inside

Delicious in any variety of ways – melted dark chocolate (in very small quantities) would be great on them!
