This salsa verde or dressing is great with fish, chicken, salad and potatoes. It is quick and easy and you can keep it in a jar in the fridge for a couple of days.
- 1 Clove Garlic
- 2 or 3 Anchovies
- good drizzle Extra Virgin Olive Oil
- Lots of Herbs
- Juice 1 Lemon
- Red Chilli (optional)
Good Herbs to Use
- Basil or Coriander
Whizz up all your ingredients in a food processor
You could do this by hand in a pestle & mortar or by chopping everything very finely
You want enough oil and lemon juice (2 parts to 1 generally) to make a wet sauce that isn’t too thick or too runny
This works well with 0% Greek Yoghurt – enjoy with fish, chicken, rice, potatoes etc!
