Prepare your salad vegetables by washing them and trimming them (so they’re easy to dunk in the tahini dressing)…
I used Spring Onions, Cos Lettuce and Cucumber. Celery, Green Peppers or Radishes would also be good here
Make the Tahini dressing by whisking together 2 tbsp Light Tahini, a big drizzle of Olive Oil, the juice of 1 or 2 Lemons, 1 crushed Garlic Clove, 2 tbsp Water and some black Black Pepper
Taste and season… it might want a bit more Lemon juice, or a pinch of Salt? If you’re after more of a dip, add less water (and/or some yoghurt). Add more cold water if you prefer more of a dressing consistency
Refrigerate until needed… Is best served mezze dishes. Lentils; Bean Fritters; Falafel are all good. Slightly Pickled Beetroot is another great match
