Garlic Roasted New Potatoes

Brilliant roasted potatoes that work well as a side dish for stews, roasts or fish dishes.

Ingredients

  • Potatoes
  • 8 – 10 Cloves Garlic
  • Fresh Parsley & Rocket
  • Maldon Salt
  • Rape Seed Oil

Pre-heat the oven to 200˚c

Scrub the Potatoes; dry them and toss them in a roasting dish in a very little amount of Rape Seed Oil.  Sprinkle with Salt and roast for 10 – 15 minutes

Take them out of the oven and give them a good shake after adding the cloves of Garlic (still with their skins on).  Make sure there is a little coating of Oil on the Garlic too…

Roast for another 10 – 15 minutes, or until the Potatoes are cooked through and slightly crisping up on the outside.  (If the Potatoes take longer to cook, remove the Garlic cloves when they’re squashy to avoid them burning… you can add them back to the dish when you serve)

Sprinkle some fresh Parsley and Rocket (or Chives or Dill…) onto the roasted Potatoes just before serving… They’re great with a dollop of English Mustard and some beef…

NB – I think these were Charlotte Potatoes, but any Potato would do!
