Garlic Mushroom Pizza

As well as being joyfully healthy, this pizza is garlicky and delicious, and comes complete with a crispy thin crust and a creamy topping that is tasty and fresh all at once... Very easy to make, and too easy to eat; you'll be lucky to have any leftovers!

Pizza Dough

  • 250g Strong White Flour
  • Large Pinch Salt
  • Drizzle Olive Oil
  • 175ml Very Warm Water
  • Nearly a whole sachet quick yeast

Topping

  • 0% Greek Yoghurt
  • 2 or 3 Cloves Garlic
  • Salt & Pepper
  • Fresh Basil (and/or Dill, Chives)

To make the dough – mix 250g Strong White Flour with a big pinch of Salt, nearly a whole sachet of easy Yeast, a drizzle of Olive or Rape Seed Oil and 175ml of really warm / nearly hot warm Water…

When it comes together, knead on a clean surface for 5 minutes or so

Leave the dough in a bowl, dusted with Flour for an hour or so, somewhere warm, covered with a clean tea towel

After 1 hour… knock the risen dough back into a ball and leave to rise again while you make your topping

In a bowl – mix a couple of crushed cloves of Garlic with around 4 tablespoons of 0% Greek Yoghurt.  Add a good pinch of Salt, a massive crunch of Pepper and some chopped Herbs… Basil, Parsley, Dill or Chives all work well – as do Oregano, Chervil or Thyme (maybe not all at the same time!)

Brush the Mushrooms clean, and slice them into very very fine slices…

When the dough has risen a little bit again (anything from another 30 to 90 minutes – whenever suits you to eat really) – roll three Pizza Bases out on a floured surface

To cook the Pizzas, pre-heat the oven to 250˚c

Use a tablespoon of the Garlicky Yoghurt mixture on each Pizza, carefully spreading it out – and not using too much (you don’t want soggy Pizzas)

Put a few Basil leaves on top of the Yoghurt… and some slices of Mushroom.  Don’t load the Pizza up too much…

Finish with a drizzle of Olive Oil and then get the Pizza into the oven quickly for 11 minutes or until it is crispy and hot

Enjoy with some Tomato Salad and some extra Herbs…
