Fennel, Cucumber & Green Bean Salad

This is a fresh and light salad that tastes particularly delicious with fishcakes and some tartare sauce. In fact, the brilliant combination of fennel, cucumber and runner bean works really well with fish dishes of all varieties - and this is the ideal salad if you've got people coming round, because it is super quick and easy, but looks quite smart and tastes divine.
Ingredients
- Lettuce
- Fennel
- Red Onion
- Cucumber
- Runner Beans
- Lemon
Wash the Lettuce, dry the leaves gently
Wash and very very finely slice the Fennel (big bits aren’t as good as ‘shavings’!)
Wash and slice the green Runner Beans
Wash and slice some Cucumber
Slice some Red Onion
Arrange in an artistic fashion on a large plate, or a series of smaller ones
A small jug of Olive Oil and some Lemon wedges are a great substitute for making a dressing
Delicious with Fish… or a Pork Chop
