Wash and dry your salad leaves; lay them out on a plate
I fried half the courgette, sliced, in olive oil for 3 or 4 mins on each side before draining them on kitchen paper
I then chopped the tomato, red onion and sprinkled these over the lettuce
Slice the rest of the courgette (I do this with a peeler) and spread the slices over the salad, followed by the cooked (now cooled) courgette slices and lots of chopped herbs & capers
Drizzle a good mustardy dressing over this just before serving with lots of black pepper
(Dressing – 1 tsp Dijon mustard, 1 tbsp red wine vinegar, 3 tbsp good olive oil)
