Corn Salad

This is good for you - low in cholesterol itself - and is the kind of vegetable portion that actively works to reduce cholesterol too... Is terrific with barbeques as well as being brilliantly healthy


  • Can Sweetcorn (salt & sugar free preferably)
  • Orange Pepper (or Red)
  • 1/2 Red Onion
  • Fresh Herbs


  • Lemon & Lime
  • 1 tsp Red Wine Vinegar
  • Olive Oil
  • 1 clove Garlic
  • Dijon Mustard

Drain the Sweetcorn

Finely chop the Red Onion, Pepper

Chop your herbs – I used broad bean leaves, chives and parsley

Mix these ingredients together in a serving bowl

To make the dressing, crush the Garlic and add to the Mustard and Vinegar with a squeeze of Lemon and Lime juice

Give it a mix and add a really good glug of Extra Virgin Olive Oil

Dress the salad immediately before serving
