Drain the Sweetcorn
Finely chop the Red Onion, Pepper
Chop your herbs – I used broad bean leaves, chives and parsley
Mix these ingredients together in a serving bowl
To make the dressing, crush the Garlic and add to the Mustard and Vinegar with a squeeze of Lemon and Lime juice
Give it a mix and add a really good glug of Extra Virgin Olive Oil
Dress the salad immediately before serving
