Use a shallow dish for this so the Tomatoes don’t roll round too much!
Halve the Tomatoes
Slice the Red Onion
Chop the Capers (rinse and dry them first if they are in brine) and the Red Chilli
Lay the Tomatoes out and cover with the Onion, Capers and Chilli
Dress with a spoonful of Balsamic Vinegar and a drizzle of Extra Virgin Olive Oil – also a lot of Black Pepper just before serving (not so much Salt)
This salad is good buddies with a nice slice of lean smoked ham
