Carrot Slaw with Celery

This isn't your average coleslaw.. it's fresher and lighter and has a great crunch from the celery and the carrots. Pick a herb that matches the food you're eating with this 'slaw - some chives or chervil would be good with veggie burgers or chicken; coriander or mint would be a good match if you were eating spicy food (lamb koftes, flatbread and chilli sauce for example); and parsley would be perfect if you're serving this with a beefburger or a steak. However you 'herb up' your coleslaw, it will remain brilliantly tasty and predictably healthy.

Ingredients

  • 6 Carrots
  • 2Sticks Celery
  • Parsley (or other fresh herbs)
  • 2 tbsp 0% Yoghurt
  • 1 or 2 tsp Homemade Mayonnaise
  • Half a clove Garlic
  • Juice of half a Lemon
  • 1 tbsp Cold Water
  • Pepper
  • Pinch Chilli Powder

Wash and very finely slice the sticks of Celery

Scrub and then finely grate the Carrots

Wash and finely chop the Parsley

In a large bowl, whisk together 2 tbsp Yoghurt, 1 or 2 tsp Mayonnaise, half a (crushed) clove of Garlic, the juice of half a Lemon, 1 tbsp Cold Water, a crunch of Black Pepper and a small pinch of Chilli Powder

Taste and season the dressing – you may want a little more Lemon juice, or Mayo, or Pepper?!

When you love the taste of the dressing – mix in the grated Carrot and chopped Celery

Gently mix everything together

Leave in the fridge for half an hour or so before serving – and add the chopped Parsley (or other Herbs) at the last minute
