Bulgur Wheat Salad

When I made this healthy and delicious salad originally, I imagined it was tabbouleh - but the more I read about tabbouleh, the less it seems that bulgur wheat is its biggest component... so instead let me present a bulgur wheat salad with some other tabbouleh ingredients thrown in for good measure.

Ingredients

  • 1 Mug Bulgur Wheat
  • Handful Cherry Tomatoes
  • Cucumber (about 5cm worth?!)
  • Half a Green Pepper
  • Half a Red Onion
  • Lemon Juice
  • Olive Oil
  • Handful Parsley
  • Handful Mint

Put the Bulgur Wheat in a large heat proof bowl and pour boiling water over it.  Leave for 15 – 20 minutes and then drain (you want it to taste cooked, but still with some bite).  Once drained, leave in a sieve over the bowl so it dries off a little (for half an hour or longer) before you mix the Bulgur with the other ingredients

Finely dice the Tomatoes, Cucumber, Red Onion and Green Pepper

Finely chop the Parsley and the Mint leaves

Just before serving – mix all the ingredients together.  Dress liberally with Lemon Juice and its Zest – and with a little Olive Oil.  A crunch of Black Pepper and you’re ready to serve this…

Is great with grilled fish and some Tahini Dressing
