Wash all your salad
(I use a plate – the salad looks much better than in a bowl, and it stays put as you dress it rather than having to toss it all around)
I go for bigger leaves on the bottom; in this case, not so big Little Gem Lettuce leaves
Diced Cucumber then Chopped Red Onion on top
Big pile of chopped herbs over the top – I like Parsley and Rocket with Roast Chicken, but Dill or Mint or Basil would be good
Drizzle with Olive Oil and Lemon Juice, Salt & Pepper
