Beans with Cumin & Chilli

These lovely beans are garlicky, and have a delicious but light curry flavour. They are great served with anything spicy, but also with simply grilled fish or chicken, or some flatbread or tortilla. A spoonful of Greek Yoghurt would be an excellent addition, as would fresh herbs like Mint or Coriander.

Ingredients

  • Large tin of Butter Beans
  • Small tin of Kidney Beans
  • Fresh Chilli
  • 2 Cloves Garlic
  • Half a tsp Cumin
  • 1 tsp Curry Powder
  • Fresh Lime or Lemon

Drain the tins of Butter Beans and Kidney Beans (you could use other combinations of beans too…)

Crush the Garlic and finely slice some Red Chilli (or you could use Chilli Flakes)

Heat a pan with a little Olive Oil; when hot, add the Garlic and Chilli and fry for a minute, or just until the Garlic has cooked and is smelling delicious…

Add the drained Beans and stir

Add the teaspoon of Curry Powder and half a teaspoon of Ground Cumin, and cook for a few minutes until the Beans are hot and covered in Garlic and Spice flavour

After 5 minutes or so, before the Beans start to take on any colour, remove the pan from the heat and add the juice of 1 Lime or Lemon (or at least a massive squeeze)

Season with Salt & Pepper to taste, and serve on the side with some Curried Lamb… or with a simply grilled piece of Fish maybe?!

These Beans are also delicious with some chopped Tomatoes and Red Onion, wrapped up in Flatbread or Tortilla (with a dollop of Greek Yoghurt)
