Baked Mackerel with House Rub

If you're trying to get healthy and lower your cholesterol, then mackerel really is the fish for you... It is super high in omega-3 fatty acids and is the kind of food we are perpetually being told we should eat lots more of. Tedious though I know it can be to do what you're told to do; actually in this instance it's easy... because mackerel really is delicious, and especially delicious when cooked with a spicy rub a la Pitt Cue.

Ingredients

Get your fishmonger to gut the fish – make sure it is fresh and clear-eyed

Make some slashes diagonally in the fish – just so you can rub some flavour in (see picture)

Use 1 tablespoon of Pitt Cue House Rub – maybe a little more

Sprinkle it onto the fish and rub in a little

Add some Salt & Pepper, and a little drizzle of Extra Virgin Olive Oil

Bake at 180˚c for 25 – 30 minutes or until cooked and starting to flake a little…

Serve with some simple sides – maybe a baked potato, a crisp green salad – maybe some zucchini fries?!  Either way, a dollop of 0% Greek Yoghurt wouldn’t go amiss here…
