Baked Cod with Chives

This cod recipe is slightly extravagant, but nevertheless very delicious (the fillet pictured here was £6.50 at our fishmongers and fed three easily, would have fed four at a push). The simple Chive Oil would work brilliantly with any white fish, and would go equally well with chicken, some pilav or a few sweet potato fritters... This healthy cod dish is also really quick and easy to prepare and cook at home.

Ingredients

  • Cod
  • Chives
  • 1 Clove Garlic
  • Lemon
  • Salt & Pepper
  • Olive Oil
  • Red Onion (optional)
  • Red Chilli (optional)

Pre-heat the oven to 180˚c and line a baking dish with greaseproof paper

Get the Chives ready by chopping and then slightly crushing them with a clove of Garlic, a little Salt.  Add a really big squeeze of Lemon and 1 or 2 tsp of finely chopped Red Onion and/or Red Chilli. Stir a couple of tbsp of Olive Oil into the Chive mix

Put the Cod into the baking dish

Squeeze a little Lemon or Lime over the Cod and a little spoonful of the Chive Oil along with a crunch of Black Pepper

Bake for 15 – 25 minutes or until the fish is just starting to flake, and is cooked all the way through (still moist though)

To serve – drizzle a couple of larger spoonfuls of the Chive Dressing over the fish, and enjoy with some roasted potatoes and some seasonal salad
