Baharat

This Baharat is fabulous, and made excellent use of a coffee grinder that I've only used once for what transpired to be some very badly ground coffee... I made this spice rub to go with Ottolenghi Meatballs (which are coming soon) but actually, sprinkled over meat before you grill it, or fried with some onions and garlic as the beginning of a simple curry - this is great stuff for much more

Ingredients

  • 1 Tsp Black Peppercorns
  • 1 Tsp Coriander Seeds
  • 2cm of Cinnamon Stick
  • 1/2 Tsp Whole Cloves
  • 1/2 Tsp Allspice
  • 2 Tsp Cumin Seeds
  • 1 Tsp Cardamon

Literally – whizz all the ingredients up in a coffee grinder.  If you don’t have a coffee grinder – a food processor will probably work (mine doesn’t whizz it up as finely) – or smash up the seeds with a pestle & mortar (actually much more fun!)

Use as you would curry powder… is delicious roasted on top of Butternut Squash
