Wash the Baby Gem Lettuce – leave the leaves whole but cut off the base
Lay the leaves out in a circular fashion (!) on a large plate
Sprinkle leaves with finely chopped Red Onion, washed and halved Cherry Tomatoes and a tablespoon or two of Capers drained on some kitchen paper
Use a dressing of 1 large teaspoon of Dijon Mustard, 1 of Red Wine Vinegar and about 4 or 5 of Extra Virgin Olive Oil – drizzle liberally
