Avocado Side Salad

Ingredients

  • Avocado
  • Red Onion
  • Tomatoes
  • Mint
  • Lime or Lemon
  • Rape Seed Oil

Make this just before you eat it as the Avocado will be best – it tends to go a bit brown if prepared in too organised a fashion (ie early)

Slice the Avocado

Slice the Red Onion

Chop the Tomato/es and the Mint

Lay the Avocado out in a circle on a plate – lay the slices of Red Onion on top – and then add the chopped Tomato in the centre

Crown with chopped Mint and serve with a really good squeeze of Lemon or Lime and some Rape Seed Oil

Great with Italian food – also with grilled fish or chicken
