Avocado & Lettuce Salad

Avocado is another food I am currently trying to consume lots more of in the interests of lowering cholesterol... It is super good for you, and is one of the few foods that has been scientifically proven to lower your bad cholesterol (precisely because of how much good cholesterol it contains). Whilst you might want to steer slightly clear of avocados if you are dieting; if you're not, you should definitely be eating lots more of these delicious fruit.

Ingredients

  • Lettuce
  • Avocado
  • Red Onion
  • Cucumber
  • Dill or Parsley
  • Lemon
  • Rape Seed Oil

Wash the Lettuce and lay the leaves out in a circular fashion on a plate

Wash and slice the Cucumber and slice the Red Onion – lay the slices out over the Lettuce leaves

Chop the fresh Dill or Parsley in advance

Only chop the Avocado just before you want to eat… (the Avocado will go brown if you chop it too early – squeeze Lemon Juice over it to prevent this…)

Serve the Salad with Lemon Juice and a drizzle of Rape Seed Oil.  Black Pepper is also very good

This salad is perfect with Pizza or Pasta
